American lobsters are usually greenish-brown, and turn red when cooked. However, sometimes there are variations in this color - lobsters sometimes are blue, like this one, or even orange, yellow, white, or "calico." This variation is thought to have a genetic cause, although it can also be related to nutrition.
Lobsters molt (shed their exoskeleton and form a new, larger one) to grow. Even when this lobster molts it will retain its distinctive coloration.
